Ancient practice meets modernity. The art of brewing and drinking tea stretches back thousands of years. We’ve taken the ancient principals and incorporated them into modern technology using @alphadominche’s steampunk machines to brew you the perfect cup of cha. The machines perfectly regulate time, temperature, and agitation (movement of the leaves) for each different class of tea we offer.

Quick fact: In the tea world, the unfurling of the leaves when steeped in hot water is called “The Agony of the Leaves.”  Sounds like a term coined by Edgar Allen Poe, huh? Morbid or not, it’s a beautiful and meditative process to behold while waiting for your tea to brew, especially with certain specialty teas like this hand-rolled Fujian Pearl oolong from Fujian, China (O05).  Letting a tea like this, or any tea you acquire that looks as if it’s hand rolled, steep in a space which allows the leaves to move around and unfurl (as opposed to stuffing it in a tea bag) allows for the full expression/flavor of the tea to come out.  Cheers!

Quick fact: White teas, which are very rarely (if at all) rolled or oxidized (like most black, oolong, and green teas) are the closest teas to the actual Camilla sinensis (tea plant). This results in the highest anti-oxidant count and the least caffeine. As teas are oxidized, they become darker in color and the caffeine count increases, simultaneously lowering the beneficial anti oxidants, but giving a much more robust and bold flavor. Finding the right tea for you is usually a balance of these factors.
